Lemon Chicken Meatballs

My lemon chicken meatballs are an absolute meal prep lifesaver! Bursting with fresh flavor, they pair perfectly with any carbs and veggies you have on hand. With their delightful lemon and aromatic taste, they make a great family favourite.

Ingredients
1kg chicken mince
2 white onions, diced
4 cloves garlic
2 eggs
Zest of 2 lemons
1 tbsp fenugreek seeds, grounded
1 tbsp oregano
60g white breadcrumbs
Salt and pepper
Method
Preheat the oven to 190 °C.
Put all your ingredients into a large mixing bowl then mix everything thoroughly by hand, making everything is incorporated and the mixture is starting to smooth.
Grab a baking tray with small muffin holes and spray with low calorie oil.
Roll the mixture into even, small meatballs. I used scales and each meatball weighs around 25g.
Pop these into the oven and bake for 25 minutes until golden brown.
They should pop right out of the baking tray and can be served hot or you can freeze them in an airtight container.
Mimi's tip: This is such an easy meal prep and with the meatballs cooked and portioned, they are super easy to reheat (from frozen!) in the airfryer or oven. If you're air frying, heat at 170° C for 18 minutes or 170° C in the oven for 35-40 minutes. Do make sure the meatball is piping hot if reheating.
