Lemon and Asparagus Orzo

When I'm short on time or energy, this is my go-to solution! It's perfect for a quick, easy, and healthy weeknight dinner. With its creamy, fresh, and nutritious goodness, it only requires a few simple ingredients.

Ingredients

  • 2 vegetarian sausages (I used Quorn)

  • 1 white onion, diced

  • 2 cloves minced garlic

  • 125g asparagus tips, chopped in half

  • Zest of 1 lemon

  • 300g vegetable stock

  • 140g dried orzo

  • 2 tbsp low fat creme fraiche

  • Salt and pepper

  • Basil to garnish


Method

  1. Heat a large pan on medium heat.

  2. Add your frozen sausages and toss until they start to soften.

  3. Add your onion, garlic and asparagus.

  4. Once everything is golden (around 10 minutes), cut up your sausages and add back to the pan.

  5. Zest in your lemon and add your dried orzo. Give everything a good stir to coat the orzo in those pan flavours.

  6. Pour in the veggie stock and simmer for around 10-15 minutes or until the pasta is cooked al dente.

  7. Add your creme friache and plenty of pepper.

  8. Serve hot with some fresh basil and enjoy!


Mimi's tip: You can use veggie sausage, meat sausage or no sausage! You can also make this with chicken or fish, whatever you're in the mood for. It takes 30 minutes from start to finish and is a very comforting weeknight dinner. Tastes even better for leftovers the next day!
