Honey peaches and ricotta

This is the ultimate summer breakfast! Featuring seasonal peaches and fresh ricotta, it's not only fresh and high in protein but also incredibly luxurious, all in just 10 minutes! I love serving it with fresh basil for that extra zing. You absolutely have to try this.

Ingredients
1 slice of thick wholemeal or granary bread
1 ripe peach
1 tsbp runny honey
60g ricotta cheese
10g unflavoured protein powder
1 tsp herbs de provence
1 tsp balsamic glaze
4 leaves of basil
Salt and pepper
Method
Get a small bowl and add your ricotta, seasoning and protein powder. Mix this together until you get a smooth but thick mixture.
Cut your peach into small segments and heat a pan over medium high heat.
Add half a tbsp honey to the pan and fry the peaches until they are golden and a bit charred, flesh side down, this should take around 4 minutes. There's no need to turn these as we want the colour all on the inside of the peach.
Finally assemble your ricotta mixture on your toast and place the peaches on top, drizzle with the remaining honey, balsamic glaze and some chopped basil. Enjoy!
Mimi's tip: Make sure this is served straight away as you still want the peaches to be hot. This boujee breakfast goes great with a hot coffee. Bare in mind, you can easily multiply the ingredients to serve more people.
